Pietradolce Passito Rosso
PietraDolce is an IGT of the Veneto with an intense garnet red color, very scent
complex of rose, violet, plum jam, and wild fruit.
Exciting taste, whose delicacy brings back all the flavors perceived
to smell, blended with a sweetness that harmonizes and balances the whole.
Corvina, Rondinella and other native grape varieties to complete.
THE VINEYARD: geographical location and characteristics
The vineyard is located in the hills north-west of Verona, characterized by red soils
and browns on marls of Cretaceous age and red compact soils on Eocene limestones.
PLANTS: the system and density
Simple Veronese pergola with 3,500 vines / hectare.
HARVEST: times and ways
In mid-September, the grapes are harvested manually, selecting them for the next one
withering: the best parts are chosen, that is the external parts, the wings of the bunch ed
even the smallest and sparse bunches.
After a thorough drying, in early February the grapes are subjected to
destemming and crushing; during fermentation the temperature of the must stabilizes
around 15 ° C. A long maceration (25-30 days) with daily replacements
the fermentation process continues. After the drawing off (ie the separation of the
pomace), 2-3 clean wine decantations are applied. Towards May-June the wine moves
in wood for maturation and its fermentation continues for a long time, until December.
After a further decanting to clean, the wine is bottled and the refinement continues
for a few months.

Pairs excellent with pandoro, it goes well with all dry pastries, with chocolate
dark, deserves to be tried with spicy cheeses. Serve at temperature
